Ash Gourd Halwa

  • 2 cups grated ash gourd
  • 1 cup sugar
  • ½ cup ghee
  • ½ cup milk
  • A pinch of saffron threads
  • ¼ cup chopped nuts ( cashews, almonds, pistachios etc)
  • ½ tsp cardamom powder
  1. Grate the ash gourd and squeeze out any excess water.
  2. Heat ghee in a heavy-bottomed pan or kadai.
  3. Add the grated ash gourd and sauté on low heat until it turns translucent and the water is evaporated.
  4. Add milk and saffron threads and continue to cook, stirring frequently, until the mixture thickens and the ash gourd is cooked well.
  5. Add sugar and stir. Continue cooking until the halwa thickens.
  6. Add chopped nuts and cardamom powder.
