Panjab is a land of abundance filled with great things to eat. The world famous Tandoori Chicken, Sholay Batura, Dahi Bhulla, Matter Paneer and Gajjar ka Halwa were all born in the northern state of India.

Panjab is also home for mouth watering Curries, Tandoori Tikkas, Kebabs, Machili (fish) dishes and Mutton. From starters to main course and finishing off with dessert – the Panjabi palate warms to the exotic tastes of spices, masala’s and garnishes that cannot be found in western dishes.

Panjabi’s are acclaimed food connoisseurs and believe that good food not only strengthens the physique but also enriches the mind. The fondness for rich, easily prepared food has led to an abundant variety of mouth watering delicacies that is now seen in restaurants and kitchens around the world.

Panjabi cooking excels in vegetarian and non-vegetarian food, dishes like Sarson ka Saag, Makki di Roti, Rajma Chawl, Aloo Gobi and Kadhi. In restaurants the Vegetarian Thali, which is a balanced meal, is generally served with 2 or 3 vegetable curries, rotis/nans or rice, yoghurt/raitha, papadams and pickles are very popular with their rich variety and pleasing food for all.

Indian daals for example Daal Makhani and Moong Daal are known for their delicious and mouth-watering qualities and weight-watchers can consider it as a healthy main course. It will be a meal by itself if it is taken along with a piece of bread.

Breakfast is the most important meal of the day, in a Panjabi household mornings usually consist of waking up to Aloo Paranthe with yoghurt and pickle, washed down with sweet/salty lassi, and is a rich filling breakfast that can satisfy anyone until lunchtime.

The use of ghee in Panjabi cooking is quite popular as it brings out the rich texture and flavour in cooking but you like you can substitute any oil you like for ghee and the results will be equally good.
